Spicy Deviled Egss with Anchovy

12 eggs

Ingredients:


  • 6 cold hard boiled eggs
  • 4 minced anchovy fillets
  • 1/4 cup mayonnaise
  • 2 Tablespoons Dijon mustard
  • 1 teaspoon prepared horseradish
  • 1 pinch cayenne pepper
  •  2 Tablespoons fresh lemon juice
  • Salt and Pepper to taste

Directions:

Peel and half lengthwise the 6 hard boiled eggs.  Place the yolks in a small bowl, reserve the whites for filling. Add the anchovy fillets, mayonnaise, mustard, horseradish, cayenne pepper, and lemon juice, to egg yolks and mix well. Season to taste with salt and pepper.  Pipe egg yolk mixture into egg whites Garnish with anchovy and parsley.
